My sweet neighbor Claude the Gardener brought us some fresh parsley yesterday from his enormous garden. It smells so good! The aroma is simply invigorating. I have never had fresh-from-the-garden parsley before. I always buy parsley that is dried. Occasionally I will buy fresh but it always goes to waste because we use a very small portion, put it in the frig, and throw it away a week later since it is wilted and ugly.
I wanted to preserve some of this fresh parsley for the future so I found a this great link on line. This site gives great tips on how to:

I remember buying fresh herbs years ago for the first time and trying to determine how much to use. My husband and children are not big spice eaters so usually plainer is better for us. However, I have tried to sneak more spice into our meals in the past few years and have been quite successful. I often use parsely, oregano, garlic and onion powder.
I am excited to save some of this parsley for future meals! And guess what? Just found some basil in the bunch as well! Eureka!
